Fridges in Motorhome and Caravans are clever bits of kit. They are in general “Absorption” fridges. They can run on gas, mains or 12volts (with the engine running). Old fridges in the 1980s had to level. However the more modern versions have a tolerance for being out of level. For Thetford models this is 3 degrees and for Dometic models the tolerance is greater at 6 degrees.
So this makes the levelling of your unit important. Fail to level and your beer and wine could get warm. And that’s something that none of us want.
